This dish goes waaaaaaaay back. Back enough years, to when I was posting my cooking on my personal Instagram page via Stories and would save them to my Highlights. It feels positively archaic now and is a somewhat startling reminder as to how far along on this journey I have come. A few of my friends have been cooking my dishes since these very early days and one of my girlfriends cooks this dish every single week without fail. Maybe because it’s quick and easy. Or maybe because it’s unfailingly delicious. Whatever her reasons are, this dish has now become one of those core memories of her family’s food lore.
That’s what I love about home cooking. Dishes start out as either words on a page or images in a video and then over time become woven into the fabric of your own personal food history. Will this dish become part of yours? Maybe or maybe not. But I can guarantee it has chance.
