Sometimes I make a dish and it’s so good I just keep making it. Like this poached halibut in a coconut cream sauce. I made it once for dinner and then made it again 2 more times that week. I swapped out the halibut for cod one night. The third time I used salmon. I will be making this again soon with shrimp. It can also be made with chicken. It’s just so good and so versatile and everyone loves it and it’s all done in one pan. What’s not to love?
As we barrel toward the 4th of July, Summer is in full swing. I loooove Summer. Some people hate having to entertain their kids or drive to and from camps and I fully admit that if I was in a more traditional job, I would feel the same way. But now I take the route of least resistance and don’t over schedule the kids. I let them sleep in and have slow lazy mornings. We had no camp last week and none this week and I am not sad about it. I love the off beat cadence of Summer. We hit up a Farmer’s Market, they help in the kitchen, we go for a walk and of course I also let them watch too much TV. Summer is a time to recharge after what is always a grueling end of year, which for us segues directly into a trip. So these few weeks where I don’t know what the kids are going to do today or what I am going to cook, I enjoy. Boredom is healthy and I have the rest of the year to be on a schedule.
