People are always asking what they can bring when I invite them over for a dinner party here and the 2 most common things I tell someone are a salad or an appetizer. Salads are just so easy. You can tell them what the the main course is and they can put together something crunchy and delicious that will fit menu. I love salads. I eat some version of a salad every single day. When someone invites me over, I often ask can I briny anything? Can I bring a salad. Salads don’t have to be boring or mundane. Often times salads can be entire meals unto themselves. This salad that I brought to a 4th of July dinner party last week is so versatile and easy. Tailor it to the veggies that you enjoy. It does take a little bit of prep but it’s not hard. I love it as you can dress it ahead of time and it will actually improve as it sits. By putting the arugula resting on top of everything else and not tossing it until you serve, it means the arugula won’t go soggy. This recipe is a crowd pleaser. I got quite a few comments like if they brought that to a dinner party or bbq no one would ask them back. But here in southern California, we love salads.
