Bagna Cauda Salad Dressing - Making Salad so Good You Need to Make Extra

Whenever I have a dinner party, salad is never the first thing to go. I mean, don’t get me wrong, I make a good salad. But it’s rarely so good that it’s the first thing to go. Every few months I throw a dinner party for my girlfriends. It’s always a light and relaxing night full of funny moments, fab food, martinis and belly laughs. I do a beautiful table scape and we sit outside eating, drinking, …smoking… and righting all the worlds wrongs as only women can do.

Everyone wanted this table cloth and it wasn’t easy to find online. Locally I got it at Roger’s Gardens in Corona del Mar, CA. Online I found it here.

For this party, I served a lot of anchovy dishes. These gals have great palates and I knew they would appreciate, rather than be apprehensive, of my favorite flavor bomb ingredient. The Bagna Cauda with crudité was literally lapped up but the clear winner of the night was the Bagna Cauda salad dressing. I am sure the entire salad was good, but the dressing is what made this dish the star. Not only did I barely have enough and certainly did not have enough for seconds. But, it was also the first and only dish to be sold out entirely. I always make a lot of food at these dinners so I can send everyone home with a doggie bag. This was not the case with the salad. So without further ado, I give you a beautiful Winter salad with an herby Bagna Cauda dressing.
