Leeks Braised in White Wine and Cream

Ok… so maybe that’s a bit of an exaggeration… but this recipe did garner over 4 million views in less than 24 hours and for my little corner of the world, that is breaking the internet.

The French love their leeks and I am embarrassed to say that I had never knowingly eaten a leek until I moved across the Pond at the age of 23. I did not grow up eating leeks and it’s quite possible I didn’t even know what one was. But the British love their leeks and they introduced me to their leek eating ways. There are many ways to enjoy this versatile vegetable, but one of my favorites is braised.

They cook slowly in a mixture of wine and cream and the end result is a creamy unctuous leek that is beautifully golden brown on top. This dish as all my favs: anchovies, leeks, tarragon and bay leaves. It’s one of those dishes that is as beautiful as it is delicious. Make this for your next dinner party, as I am doing in 2 days, and watch your guests swoon. Or just make it for yourself. You are worth it.
