It’s a big claim but I stand firmly on this. There are many ways to make pasta Bolognese and another recipe has even featured here on my Newsletter. But this one takes the cake. I love how uniformly unctuous the sauce ends up being by grinding up the pancetta and vegetables. People can fight all day in the comments about what is in or not in the DOP registered recipe, but all that matters is that the sauce is easy enough for you to want to make at home and that it’s delicious.
This is a sauce for a Saturday or Sunday. It’s not quick. But the end result is one that food memories are made of. Your family and friends will talk about that time you made them that Bolognese and oh my god can you make it again? They will ask for the recipe. They will know that meal was made with love.
