The Most Beautiful Dish I Have Ever Made

Sometimes my dishes turn out beautifully. But most of the time my cooking is simple, delicious and terribly normal looking. This dish had been on my list to cook for quite awhile but I wanted to wait for early Spring, when the nights started getting a little bit longer and there is the smell of a new season clinging to the wet blades of grass in the mornings. It’s no secret to anyone who follows me that I have been on a cabbage kick and for that I don’t apologize. It’s a wonderfully versatile vegetable that is easy on the weekly food budget and can be turned into everything from a casual coleslaw to this stunner of a dish. One of my favorite things to do in cooking is to take normal everyday ingredients and turn them into something spectacular. This Charlotte de Chou embodies that.
There are so many directions you can take with this dish. Add bacon or ground meat and make a whole meal of it. Add a gooey cheese in the middle and turn it into a vegetarian main course. Take it to Italy and fill it with slow cooked pork and fold Parmesan into the mash. The possibilities are endless and I will absolutely be playing around with the fillings in the future.
