The Dip that Keeps on Dipping

I Cannot Get Enough of these Sauces / Dips

This just might be the Summer of the Dip. Is it a dip or a sauce? Does it even matter? My theory is no. I love something that is multi-functional. I am going to be making variations of these dips all Summer long. Why? Because I love anything that is this easy and that everyone loves.

This one is bursting with dill which always screams fresh and delicious to me. But if you aren’t part of the Dill Lovers Fan Club then sub it with any fresh herb you do enjoy. The flavors on this are big. Green olives, dill, garlic, Calabrian chilies. It’s a go big or go home kinda dip. But that’s also why it pairs so perfectly with so many things. You can use it as an actual dip or a marinade or serves gorgeous crispy chicken thighs over a bed of it. The slow cooked picnic pork I made the other day would also pair well. As would grilled shrimp. I would even serve this dolloped over baby steamed new potatoes. Again, that’s why I love it so much. You can as easily eat this using radishes as a vehicle as you can spread it over toasted focaccia. It’s fantastic.

Cook’s Note: if you use a garlic grating bowl, you can create this sauce in the same bowl and then the garlic grating bowl can serve as your serving bowl

Serves 4-6 as a starter dip
