I had never heard of Sauce Robert until I started down my French culinary journey and that is a shame. It’s a wonderful sauce that is complex in flavor from the demi-glace yet comes together quickly and easily. That’s the kind of French cooking I can get behind.

These little known recipes and dishes are what keeps me coming back for more. You feel like you are uncovering a secret. One that outside of ultra foodie culinary circles, is still unknown. It’s exciting and delicious and my curiosity continues. There are many many ways to make Sauce Robert. I must have found 10 different variations and I am sure there are more. This is a decidedly simple one. I wanted the version that I could easily make on a Wednesday night.

Serves 6 / Yields 1 1/4 cups
