Leave it to good ol’ Jamie Oliver to turn parsnips into a dish of glory. I saw him cooking this dish years ago and he made them as a mix of roast potatoes and parsnips. However, I love them without the potatoes. So many people have never tried a parsnip and they are certainly not as popular stateside as they are in the UK and the Continent.
I think we need to change that. They are so delicious when cooked this way. Crispy and crunchy on the outside and soft and almost chewy in the middle. You can serve then alongside a roast dinner on a Sunday or they are a wonderful accompaniment to a Thanksgiving table. Roasted parsnips smothered in gravy are a thing of beauty.
