This cooking video popped up and I knew it would be part of the Peasant Food series. Elevating a potato dish is something I have become quite adept at lately and this recipe fits in well. I love nothing more than taking humble ingredients and transforming them into divine comfort food creations. Jacque Pepin said that when he was growing up in France, this was his favorite meal his Mother made him. I love the nostalgia that is food and also the memories. To him this is so much more than a potato dish and I hope that it becomes something similar for you and your family.
