Onions and potatoes have been engaged in a relationship of hundreds of years. They are lovers, best friends, soul mates. Their relationship crosses country lines, state lines and cultural ones. Their creativity upon presenting news ways to eat them knows no bounds. They can be dressed up for Michelin starred dining or can be eaten simply baked, with butter and spring onions. This dish is from Lyon, France and is one of the simplest ways to marry these 2 ingredients.
