Grated Carrots in a perfect Vinaigrette
I remember this salad, carrot rapees, fondly from my time in France as an exchange student. That and ratatouille and pate de campagne. Now I'm hungry.

This looks amazing and I love a carrot salad. I'm allergic to fresh oranges/fresh orange juice. Based on the flavor profile, would you sub lemon or grapefruit juice (and maybe add a bit of sugar/honey because they are not sweet like orange)?
