Roasted and Braised Onions in a Garlicky Spicy Cream Sauce
These whole roasted and braised onions are beyond delicious. Onions are often an ingredient in a dish, but rarely the main character. But here they take center stage. There is nothing like a roasted onion that goes all sweet and sticky. These are amped up with garlic, Calabrian chili and of course…cream.
These could be the main course for a light lunch served with some spicy arugula simply dressed. Or they would perfectly accompany anything from steak, pork, chicken or fish. So let’s let the whole onion come out from its side kick role and shine. Once you make these, you will find yourself making them again and again.

Roasted and Braised Whole Onions
Ingredients
You will need a muffin tin with 6 wells, 3-inch diameter
6 medium onions, any variety, can be mixed
About 1 tablespoons flavorful olive oil
3 tablespoons butter
3 teaspoons finely chopped garlic
1 teaspoon finely chopped thyme leaves
3 teaspoons finely chopped parsley
1 tablespoon hot Calabrian peppers (I like the Bono brand) (optional)
1 teaspoon sherry vinegar
2 teaspoons Maldon salt
1/4 teaspoon black pepper
1/3 Cup heavy whipping cream
6 teaspoons vegetable stock
Sprinkling of Maldon salt to finish
