Agnello al Forno con Patate is the Italian name and does sound more exotic than Lamb with Potatoes, but here we are. I feel like every country has a version of this dish and I love that. There are also soooo many variations on this even in Italy. This is the Pugliese version. Diving deeper into the simple and rustic cooking of Puglia lately has been a pure joy. Most of them fit into the Peasant Food series and all of them take spectacular simple ingredients and turn them into something special.
This dish is what I would call an all rounder. I would just as happily enjoy this in the Spring or Summer with a big arugula salad and vine ripened tomatoes as I would in the colder months with a hearty glass of red wine and roasted cauliflower or broccoli.
What I also love about this dish is that the prep time is under 15 minutes.
This dish serves 2 hungry people or 4 if served with a number of other sides.
