My husband, Matt, is what is known as a Plastic Paddy. That means he holds an Irish passport, is an Irish citizen but has never lived in Ireland. His father is from the West coast of Ireland and even though Matt is half British and was raised in England he has always refused to hold a British passport. If you know anything about the history between the British and Irish, then you can understand this.
My love and knowledge of Irish food started with Matt’s father. John is a proud Irish man and when I first started dating Matt, he told me if I was going to join this family then I would need to learn all of the Irish songs. They are sung at every family get together and I was to learn them immediately. I was fairly new to London and had only met Matt a few weeks prior, but off I went to learn the words and later the meaning, to the Fields of Athenry.
This dish is an nod to my Irish family who treated me like blood family from the moment I met them.
