I am writing this from a tiny desk in my hotel room in Lecce. If you have been off social media and have somehow escaped my overgraming of the food tour I am currently hosting, then you might have wondered what in the world I was doing in Italy when I just launched a book. But sometimes we want to do it all and so we do, even if it appears crazy.

Lecce is a truly stunning city. I have never seen an Italian city that is so clean, quiet and not crowded. There are no crazy drivers on scooters, cars honking as a form of communication and there is not a line to do anything or a crowd of people anywhere. There isn’t even laundry hanging on balconies, which I have never experienced to be absent in an Italian city. The food is off the charts and I cannot wait to return home and cook these dishes for you all. In the meantime, I have stocked up some recipes over the last few months for times like this. This is an emerald green kale pasta. I used to think that I didn’t really like kale. But then I just realized, I was cooking it wrong. This sauce is not only stunning but it’s a perfect balance of the somewhat minerally kale, salty anchovies and the acid from the lemon that brings it all together. I love this one.
