This was my first time trying this dish and I can’t believe that I have been missing it my entire life. After posting it there was a lot of correction on my pronunciation… I have called them endives (on-dives) my whole life and no one has said a thing to me. But the rest of the world calls them en-deeves apparently. There is nothing like a mispronounced world to get the Tiktok and Instagram keyboard warriors going. I get accused of mispronouncing it on purpose for rage bait. I get accused of being an uncultured American. I get accused of being downright stupid. Luckily I take social media for what it is. A large platform where people can connect and learn and be entertained. I don’t know you and you don’t know me. Not personally, anyhow. So taking barbs from complete strangers isn’t hard and I realize when someone is awful online, that it actually has nothing to do with me.
Aside from that, this dish is the perfect week night meal. Add a side salad and some crusty baguette to dip into the béchamel and you have a wonderfully tasty, easy and quick dinner.
The French take their food very seriously and it shows.
