I love dishes that are just as easy to cook for 1 person as for a large group. Sometimes everyone is out and you get to indulge in dinner for just yourself. It doesn’t happen often, but when it does I tend to find my way to a carton of eggs. But the beauty of this dish, is that it’s just as simple to multiply and cook for a large group for something like brunch.
There are many cultures that cook this dish and it’s not hugely dissimilar to shakshuka. But this is the Italian version and I love this one. If you have some leftover pasta sauce, just use that. I recently made a pork ragu and used the leftover sauce in this dish and it was divine. Feel free to get creative and add in what you like. This is a good base recipe but you can put whatever you fancy. But this is the recipe I go to when I don’t have leftovers to hand.
