I have had so much fun delving into the dishes of traditional French home cooking. This dish hails from Dijon and was like so many dishes, the result of an accident. The wife of the Mayor of Dijon was cooking for a celebrated guest and accidently put too much paprika in the dish and rectified it with cream, wine and cheese. He loved it and the dish became Chicken Gaston Gerard. Paprika is not a traditional ingredient in French cooking and thus this dish remains largely popular in mostly the Dijon region.

I got comments on my post about why anyone should listen to an American on what French people eat at home. I think people misunderstand where I am coming from on these series. I delve into the home cooking of certain countries and regions out of a deep curiosity on how they live and eat. I love learning about their traditional recipes, where they come from and how they prepare them. Curiosity is what fuels travel, learning, reading and so many other past times of mine. I am truly enjoying this French series and look forward to cooking and sharing many more dishes with you all.
