I have those kids who refuse to eat sandwiches, which makes packing their lunches somewhat tricky. I would love nothing more than to throw down some butter, good ham and cornichons between two layers of bread, but that is not the life I lead.
Typically their lunches consist of what I would consider a “girl dinner”. A lot of random things put together that centers around one main dish which is usually leftovers from my cooking. Their favorites are Japanese sticky rice with chicken and our weekly tomato pasta. But we are at the end of the year and they are getting bored. So when they asked for burritos in their lunch, I happily complied. I personally love the burritos you get that are sandwiched between a grill and the edges go all crunchy and I also thought that that would make them less likely to go soggy. These were a huge hit with both Coco and Bear and will become part of the regular lunch schedule.
