Given that I am half Japanese, it’s no surprise that this is one of my favorite things to eat. For me, this is what I make myself for lunch or dinner when I want something light but delicious and am hungry. This means that I need to be eating in under 20 minutes as when I am hungry, I become hangry. I love to eat this with a small portion of rice noodles, but I often find myself going carb free on this one as well when I want to eat a little lighter.
This is another dish where the variations are endless. I used ground pork, but any ground meat will work here. I omitted garlic and ginger for a simpler flavor, but these 2 ingredients are often in my hot pots. You can add any variation of the vegetables as well. Bok choi, celery, broccoli, radish or really anything you have in the fridge. It’s a great clean out the fridge type of recipe.
Also, the topping choices are endless. Chives, spring onions, cilantro, toasted sesame seeds, chili crunch oil, toasted sesame oil, pickled ginger: it all works. If you want a heavier broth, you can add some coconut milk.
Play around with this one and you will find yourself making it every single week.
