I love Pasta e Fagioli as there are 100 ways to make it. Some add Italian sausage. Some have pancetta or guanciale. Some have tomatoes. You can add all of these or none of them. The version I made is a vegetarian version and is what I like to eat when I want something healthy and filling yet don’t feel like eating meat.
This version uses baby kale but most Italian versions will have escarole. Baby spinach can be used as well. Beans often get a lot of hate. But beans cooked like this are something even my kids and husband will go back for seconds on.
