A perfect pairing of a vegetarian version of a Carbonara and slow cooked sweet onions gives you this surprisingly simple yet utterly delicious pasta. Whenever I am at a thrift store, I always hit up the cook book section and rarely do I walk out empty handed.
I came across this recipe in an old Italian book that I thrifted and kind of couldn’t believe that I hadn’t thought of this before. The pairing makes so much sense. The onions cook low and slow but don’t caramelize and then once you had the cheese and eggs and the silkiness of that sauce… well it takes it to the next level. The whole family devoured this one, which is always the sign of a winner for me.
